Savory Collard Greens

My Savory Collard Greens recipe is packed with flavor and cooks up quickly. In fact, the greens are still a bit “crisp-tender” and retain their color. 

Not to worry, the technique is easy. So grab a big bunch of collards from the farmers market this weekend, pull out a big skillet, and let’s get some greens going! 

Savory Collard Greens 


  • 1 large bunch collard greens, organic
  • 1 tablespoon

 ghee (can substitute butter, lard, coconut oil, other healthy fat)

  • 1 tablespoon diced shallot
  • 1/4 cup
  • Celtic sea salt or other unrefined salt
  • Ground pepper
  • Ground nutmeg or mace
  • 1/4 cup minced bacon, cooked


  1. Rinse the collards well, then roll-and-cut into large strips. Dry in a salad spinner or kitchen towel and set aside.
  2. Warm ghee or other healthy fat in a large skillet over medium heat then sauté diced shallots until just tender and translucent.
  3. Add collards and toss with tongs, moving the greens around quickly to wilt them evenly.
  4. Add chicken broth and continue to toss the greens, allowing the broth to simmer rapidly and reduce/evaporate.
  5. Season with salt, pepper, nutmeg.
  6. Top with bacon and serve!
