How-To Guide for Making Nourishing Broth and Stock

broken image

Broth & Stock from the Nourished Kitchen by Jennifer McGruther has become my new favorite reference book on the topic of my all-time favorite food. I’ve followed and admired Jenny’s blog, the award-winning NourishedKitchen.com, throughout my journey in the “real food” world and her encyclopedia of nutrient-dense recipes is unparalleled in my opinion.

Following the success of her standout Nourished Kitchen: Farm-to-Table Recipes For the Traditional Foods Lifestyle cookbook, this new guide focuses on broth, stock, bone broth (there’s a difference!), preparation techniques, sourcing recommendations, and, of course, master recipes in which to incorporate the resulting liquid gold.

With simple yet gorgeous photographs and straightforward instructions, Jenny’s book illustrates the ease of preparing this time-honored traditional food. From master broths & stocks created with chicken, turkey, beef, pork, seafood, veggies, mushrooms, and/or “kitchen scraps” to delicious recipes for classics such as Tom Kha Gai, Sopa de Lima, Pho, Oxtail Soup, Seafood Chowder, Vegetable Soup, Risotto, and Potato & Onion Gratin, Jenny’s Broth & Stock book is a treasure for new cooks as well as those with more experience in the “real food” kitchen.
