Energy Bites – Easy & Paleo

You’ll probably have these simple ingredients on-hand in your REAL FOOD kitchen. Here’s a quick list and also some suggestions on equipment.

Gather These Ingredients to Make Energy Bites

Dried dates, organic preferred. (I used organic Medjool dates.) Pecans, almonds, cashews or macadamia nuts … or a combo of any of those. (I used almonds, soaked & dehydrated as explained HERE.) Shredded coconut, unsweetened. (I used this brand, purchased by the case. It’s also handy for making coconut milk as shown HERE.) Coconut oil, organic preferred Spices

Basic Kitchen Equipment Needed

The ingredients come together quickly in my little food processor and then I form the Energy Bites in my hard-working silicon mold (just like this one).

Energy Bites

 

Yield: 12 small Energy Bites

Ingredients

  • 6 dried dates, pitted

  • 3/4 cup nuts

  • 1/4 cup shredded coconut, plus another 2 tablespoons set aside

  • 2 tablespoons coconut oil, melted but not hot

  • 1/4 teaspoon ground cinnamon

  • 1/8 teaspoon ground nutmeg (can substitute mace)

Instructions

  1. Place all ingredients (except for the 2 additional tablespoons of shredded coconut) in a small food processor and mix until well-incorporated. The mixture will start to bind together quickly. Avoid over-processing so as not to make a paste.

  2. Remove mixture from processor, divide and press gently into silicon mold or roll into balls.

  3. Place silicon mold in freezer for 10 minutes or refrigerator for 1 hour.

  4. Remove Energy Bites from the mold and carefully roll in the reserved shredded coconut.

  5. Store in the refrigerator to maintain texture.

  6. Enjoy!
